Salt

Shallots

White Wine

Meyer Lemon Zest
Meyer Lemon Juice
Chili Flakes
Butter
Parsley
**STEPS**
-PASTA
Combine semolina, pasta flour, water, salt, and squid ink in a blender. Wrap mixed dough with plastic foil and let rest for 1 hour.
With pasta shetter on the widest setting, start sheeting the dough, folding the sheets in half and keep rolling on thinner settling until the right texture and desired thickness is achieved. Cut the sheets into linguine.
-SAUCE
Add oil to the frying pan and fry shallots and garlic, deglaze with white wine. Add crème fraiche, meyer lemon zest, meyer lemon juice and a pinch of chili flakes. Reduce. Add cooked lobster meat. Add butter and emulsify the sauce. Add pasta, eventually a bit of pasta water to achieve desired consistency. Finish with chopped parsley.
