Santa Cruz Bakery Shares Secret to Delicious Cookies
It’s cookie time! California Live Contributor Blanche Shaheen takes us to Santa Cruz, home of the Pacific Cookie Company for an inside look at the cookie factory. The founder’s daughter, Stacy Gleason shares their secret to making an amazing chocolate chip cookie. Find the recipe below.
**CHOCOLATE CHIP COOKIES RECIPE**
1 CUP UNSALED BUTTER (room temperature)
1 CUP GRANULATED SUGAR
1 CUP LIGHT BROWN SUGAR
2 teaspoon VANILLA EXTRACT
2 LARGE EGGS
2 ½ CUP UNBLEACHED ALL-PURPOSE FLOUR
1 teaspoon BAKING SODA
2 teaspoon SEA SALT
2 CUPS SEMI SWEET CHOCOLATE CHIPS
-Pre heat oven to 375 degrees
-Cream together butter and sugars until fluffy
-Add eggs and vanilla extract until just mixed
-Add flour, baking soda, sea salt until just mixed
-Add chocolate chips until just incorporated. Do not overmix.
-Bake for 9-11 minutes just until the tops begin to crack a bit
-Let sit on baking sheet for at least 5 minutes to continue to bake and set up
