The Spare Room, a bar with retro games and a range of cocktails, has finally introduced a formal menu [pdf] after operating since January on the second floor of the Hollywood Roosevelt Hotel. General Manager Aidan Demarest explained the delayed intro, saying, “I wanted to get a read on what people were drinking as we put out these specials week after week, and tailor it.”
The multi-page so-called "irreverent" drink menu is the result of collaboration between Demarest and his five bartenders. The Spare Room currently features six punches, and will eventually offer twelve.
Justin Patrick, previously with Bouchon, is managing the wine menu. “It’s a really nice, smart list of wines you wouldn't normally find in your average bar,” says Demarest. [The Feast]
